Crepes


Yields: 12-16 crepes depending on size.
2 Cups Flour
3/4 Cup Sugar
1/2 Teaspoons Salt
2 Eggs
1/4 Cup Oil
3 Cups Milk
1 Teaspoons Vanilla

Mix Flour, Sugar and Salt together. In another bowl mix eggs, oil, milk and vanilla together. Mix dry and wet ingredients together until almost combine, its ok to have some lumps.

Heat skillet over medium heat with some cooking spray. Pour the desired size of crepe in the skillet and let sit until bubbles are seen then flip. Cook until a light golden brown.

Irish Soda Bread

Johnson & Wales






















8 Ounces Bread Flour
8 Ounces Whole Wheat Flour
.4 Ounces Baking Powder
.4 Ounces Salt
.25 Ounces Caraway, ground
2.5 Ounces Honey
1 Ounce Butter
8 Ounces Buttermilk
4 Ounces Water

Sift all dry ingredients together, add butter. Add Buttermilk until mixed together and Knead until smooth.

Shape dough into 1 flattened round. Dust the loaf with flour. Cut a deep "X" into the top of the loaf.

Bake at 400 F for about 35 minutes.

Buttermilk Pancakes

About 5 Servings

All-purpose Flour 10.5 Ounces
Baking Powder .5 Ounces
Baking Soda 1/2 Teaspoon
Salt 1/2 Teaspoon
Sugar 2.25 Ounces
Eggs 4 each
Buttermilk 16 Ounces
Butter, melted 2 Ounce

Sift the dry ingredients into a large bowl and make a well in the center.

In a small bowl combine sugar, eggs, buttermilk, and butter and mix well. Pour all at once into the center of the dry ingredients. Mix with a whisk until barely combine, about 10 stirs. Small lumps are expected.

Heat a large skillet or griddle pan over medium heat, lightly greased. Ladle in 1/3 cup of the mixture per pancake. When bubbles break and the bottom is golden brown, 1 to 2 minutes, turn over. Finish cooking on the second side, about 1 minute. Serve immediately.

Waffles

1 3/4 Cups All-Purpose Flour
1 Tablespoon Baking Powder
1 Tablespoon Sugar
1/2 Teaspoon Salt
3 Eggs
1 Cup Butter, melted
1 1/2 Cups Milk

Preheat waffle iron. Whisk together in a large bowl: flour, baking powder, sugar, and salt.

In another bowl mix together eggs, butter and milk.

Make a well in the center of the dry ingredients and pour in the wet ingreients. Combine with a few swift strokes of the whisk. Leave it kind of clumpy.

Sopapillas


2 Cups Flour
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1 Tablespoon Shortening
2/3 Cup Water, Warm

Stir flour, baking powder, salt. Cut in the shortening till the mixture resembles corn meal. Gradually add the water, stirring with a fork. (Dough will be Crumbly.)

Turn onto a floured surface, kneed into a smooth ball. Divide dough in half let stand 10 minutes. Roll each half in to a 12 1/2 inch X 10 inch Rectangle. Cut into 2 1/2 inch squares (Do not re roll or patch dough) Fry a few at a time in deep hot fat (425 degrees) until golden.

Drain on paper toweling. Serve with honey or in sugar-cinnamon mixture.

Pina Colada Muffins



1 Tablespoon Baking Powder
1/2 Teaspoon Salt
3/4 Cup White Rice Flour
1/2 Cup Coconut Flour
1/2 Teaspoon Xanthum Gum
2 Tablespoons Butter, melted
2 Eggs
3/4 Cup Milk
1/2 Cup Sugar
1 Can Crushed Pineapple, 20 oz Can (2 1/4 Cups)
1/2 Teaspoon Vanilla Extract
1/2 Cup Coconut Flakes

Preheat oven to 400 degrees F. In a large bowl Sift together the baking powder, salt, rice flour, coconut flour, coconut flakes and xanthum gum.

In a small bowl mix the Melted butter, eggs, milk, sugar, vanilla and crushed pineapple. Pour the wet ingredients over the dry ingredients. Mix thoroughly. Pour into prepared muffin pan.

Bake for 20 to 25 minutes.

Biscuits

Servings: 10
5 Cups Flour
5 Teaspoons Baking Powder
5 Teaspoons Sugar
1 1/4 Teaspoons Cream of Tartar
1 1/4 Teaspoons Salt
1 1/4 Cups Shortening
1 2/3 Cups Milk

Preheat oven to 450. Mix flour, baking powder, sugar, cream of tartar, and salt into a large mixing bowl. Cut in shortening. Stir in milk. Knead on floured surface. Roll out and cut. Bake for 10 to 12 minutes.

Davenport Coffee Cake

1 Cup Butter, softened
2 Cups Sugar
2 Eggs
1 Cup Sour Cream
1/2 Teaspoon Vanilla
2 Cups Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Cup Chopped Walnuts
2 Teaspoons Cinnamon
2 Teaspoons Brown Sugar

Preheat oven to 350. Cream butter and Sugar in a mixing bowl. Add eggs, sour cream and vanilla. Combine flour, baking powder and salt into another bowl. Gradually add dry ingredients. Mix until batter is smooth. Put half batter in a greased 9-inch round cake pan.

Combine all of the topping ingredients and sprinkle half over the batter. Cover with the rest of the batter. Sprinkle with remaining topping.

Bake for 35 to 40 minutes.

Corn Bread

Servings: 8
1 Cup Cornmeal
3/4 Cup Bread Flour
1 1/2 Teaspoons Baking Soda
1/2 Cup Sugar
1 Teaspoon Salt
2 Eggs
1/2 Cup Milk
1/4 Cup Vegetable Oil

Preheat oven to 350 degrees. Place a 9-inch skillet in the oven as it preheats. Mix together cornmeal, bread flour, baking soda, sugar, and salt in a mixing bowl. In a separate bowl, whisk together eggs, milk, and oil until blended. Add wet ingredients to the dry ingredients and combine until barely mixed.

When the batter is ready, remove the skillet from the oven and brush the inside lightly with vegetable oil. Pour the batter into the skillet and bake for 25 to 30 minutes or until surface is golden brown and springs back when lightly pressed with a fingertip. Cool bread in the pan for about 10 minutes before cutting and serve.

Coffee Cake


















2 1/2 Cups Flour
2 Cups Brown Sugar, packed
1/2 Teaspoon Salt
2/3 Cup Shortening
2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1 Cup Milk
1 Tablespoon Lemon Juice
2 Eggs, Beaten slightly
1/3 Cup Chopped Nuts

Preheat oven to 375. Stir together flour, sugar, and salt. Cut in shortening. Save 1/2 cup for topping. Add baking powder, soda and spices. Mix well. Add milk, eggs and lemon juice. Put in two round pans and sprinkle crumbs and nuts on top.
Bake for 20 to 25 minutes.

Banana Crumb Muffins

1 1/2 Cups Flour
1 Teaspoon Baking soda
1 Teaspoon Baking powder
1/2 Teaspoon Salt
3 Banana, Mashed
3/4 Cup Sugar
1 Egg
1/3 Cup Butter, melted
1/3 Cup Brown Sugar, packed
2 Tablespoons Flour
1/8 Teaspoon Ground cinnamon
1 Tablespoon Butter

Preheat oven for 375. Mix flour, soda, powder and salt in a large bowl, set aside. In another bowl beat bananas, sugar, egg, butter. Stir both mixtures together. Spoon batter into muffin tin.

In a small bowl mix brown sugar, flour and cinnamon. Add butter. Mix until it looks like cornmeal. Sprinkle on top of muffins. Bake for 18-20 minutes.
